Banana Chocolate Chunk Muffins

This is Dave’s ancestral recipe for banana chocolate chunk muffins, slightly updated for the modern age. The key difference is that the modern age involves Chinatown produce stands with small, cute bananas, and cheap bars of Scharffenberger bittersweet chocolate at the Co-op.
Banana Chocolate Chunk Muffins
1 egg
7 mini-bananas (or 2 full-size ones)
1/2 C vegetable/canola/corn oil
1/3 C milk
1 tsp vanilla
1 3/4 C all-purpose flour
1/4 C whole wheat flour
1/2 C sugar
1/2 tsp ground cinnamon
1 tbsp baking powder
1 tsp salt
1 C chocolate chunks
Preheat your oven to 350º.
Mix the dry ingredients (except for the chocolate) together. Mix the wet ingredients together in a separate bowl. Mix the wet ingredients into the dry ingredients just until it is basically no longer lumpy. Fold in the chocolate chunks.
Fill your greased and floured muffin tins about 2/3 full.
Bake for about 20 minutes, or until a toothpick poked in the center of a muffin comes out clean.

Give me anything with banana and flour and I will eat them: banana cakes, banana breads, muffins, fried bananas, etc! ;)

oh no, the best ingredient in cakes/muffins & u have it, simply going bananas’ here :) gee, those “mini” bananas reminds me of home too :)

I love banana and chocolate together, and agree with Rasa, baked goods with banana are delicious!

Mmm, yummy. I have a bunch of bananas about to go bad. Maybe if I can get over my baking thing I’ll give this a go :)
