Banana Chocolate Chunk Muffins

This is Dave’s ancestral recipe for banana chocolate chunk muffins, slightly updated for the modern age. The key difference is that the modern age involves Chinatown produce stands with small, cute bananas, and cheap bars of Scharffenberger bittersweet chocolate at the Co-op.

Banana Chocolate Chunk Muffins
1 egg
7 mini-bananas (or 2 full-size ones)
1/2 C vegetable/canola/corn oil
1/3 C milk
1 tsp vanilla
1 3/4 C all-purpose flour
1/4 C whole wheat flour
1/2 C sugar
1/2 tsp ground cinnamon
1 tbsp baking powder
1 tsp salt
1 C chocolate chunks

Preheat your oven to 350º.

Mix the dry ingredients (except for the chocolate) together. Mix the wet ingredients together in a separate bowl. Mix the wet ingredients into the dry ingredients just until it is basically no longer lumpy. Fold in the chocolate chunks.

Fill your greased and floured muffin tins about 2/3 full.

Bake for about 20 minutes, or until a toothpick poked in the center of a muffin comes out clean.

The hook here for me is the “Dave’s ancestral recipe” and then you’ve updated it. Isn’t that the sign of the perfect recipe and a great cook (chef)!

What adorable little muffins! They sound delish, and what a wonderful photo to help make me feel just that little bit hungrier!

  3. Rasa Malaysia Says:

Give me anything with banana and flour and I will eat them: banana cakes, banana breads, muffins, fried bananas, etc! ;)

Looks good and I can almost smell the sweet aroma of banana.

Mmm, yummy. I have a bunch of bananas about to go bad. Maybe if I can get over my baking thing I’ll give this a go :)

    LOVE the picture.

Tanna - Hell, you should see what he did to his ancestral recipe for peanut satay. I don’t eat peanuts at all, so he’s been making it with almond butter instead.

    Ellie - Thanks!

Rasa - Ooh, now you’re making me crave banana tempura.

meltingwok - Where’s home for you?

    Patricia - Yep.

Yvo - This is perfect for bananas that are just on the edge like that! Go for it!

    Kristen - Thank you!

I know I’ve said it before, but I’ll say it again, I love your photos!

Hi Danielle, I’m still lingering over those banana chocoholic muffins, someone just mentioned banana fritters/tempuras, yet another popular afternoon delight made popular in Malaysia..home sweet home :)

“cheap bars of Scharffenberger bittersweet chocolate at the Co-op”

    Cheap? I wouldn’t call Scharffen Berger cheap… :)
