Bacon grease is a great idea for jambalaya; I&#039;ll bet it adds a lot of good flavor. I need to remember that next time I make it. (And why have I never thought of storing bacon grease in the freezer? That&#039;s a really great idea.)</description>

		<description>There&#039;s a restaurant here in Alaska that has consistently been ranked as the best cajun place west of the Mississippi (for what that&#039;s worth) that has fabulous jambalaya, etouffee, etc.  The Double Musky Inn if you&#039;re ever this way.</description>

This looks similar to my old jambalaya with some interesting twists. I really like the idea of using fire-roasted tomatoes. I haven&#039;t used basmati rice in mine, but I did briefly flirt with the idea of using jasmine rice to make a more &quot;Asian-style&quot; version with soy sauce and lemon grass. In hindsight, I&#039;m glad I didn&#039;t pursue it.

Chuck Taggart&#039;s recipe at http://www.gumbopages.com/food/jambalaya.html is pretty much like mine, but I&#039;m still working on getting the amount of water exactly right.</description>
