Enough, in my book = 3/4 cup for a 9-inch pie. A bit of cinnamon is good too. The orange rind cuts the bitterness AND wakes up the taste. I've just lost my best rhubarb supply with this trick... Owners of bountiful patch were rhubarb haters... I gave them a pie... BIG MISTAKE! (Fortunately my own rhubarb patch is starting to produce. I'll be ok next year.)
