Thai Iced Tea Ice Cream

Two ice cream related posts in a row? I suppose it’s appropriate. Let’s say it’s for plaisir sucre’s summer ice cream event. We also installed our air conditioners a few days ago. Ice cream season is definitively here.

Thai iced tea is one of the best substances on the planet. Thai iced tea ice cream has a bizarre texture, stretchy almost like caramel, but is just fabulously tasty. It’s sweeter and richer than any other ice cream I’ve made, to the point where I think small servings suit it best. Just look at that stretching action in the photo! I actually stuck my finger into it as it was pouring off the spoon, and instead of breaking the flow, the ice cream just sort of bent around my finger and continued winding down as a cohesive stream. Bizarre.

Thai Iced Tea Ice Cream
2 C heavy cream
1/2 C Thai iced tea powder
1/2 can sweetened condensed milk

Put the tea in a cotton or otherwise disposable teabag - a fine strainer won’t be fine enough! I used a regular fine strainer, and ended up having to re-strain it through coffee filters, which is far more trouble than it is worth. Place it in the heavy cream and bring just to a boil, then remove from the heat and let steep until it tastes quite strong to you. Whisk in the condensed milk. Place in the fridge to chill, then put through your ice cream maker as usual.

    My goodness, this is so very similar to something I threw together in desperation one evening, save I used unsweetened coconut milk instead of heavy cream. Served over sticky rice, it was magnificent.
